PINEAPPLE CAKE


PINEAPPLE  CAKE:
INGREDIENTS:                   (serves -4 )


2  eggs
50  gm  maida (plain flour)
1  tsp  baking powder
4  slices of pineapple (round)
50  gm butter
3-4  tsp  honey
15  Sugar Free Pellets or equivalent spoons
                         Sugar Free Powder

For custard:
500  ml  skimmed milk
4  tsp  custard powder
8  Sugar Free Pellets/powder
Vanilla essence


METHOD:
  • Sieve plain flour and baking powder. Mix honey,eggs, melted butter in a mixer or with a hand blender.
  • Mix in flour, stirring vigorously. Add 2-3  tbsp hot milk or pineapple juice so that batter is of dropping consistency.
  • Grease baking dish.  Arrange 4-5 pineapple rings at the bottom, arrange glazed cherries in middle of pineapple rings.
  • Pour cake mix on it. Bake in preheated oven for 25 minutes at 330F. Remove from oven and allow it cool.
  • Pour syrup made from 4/5 crushed sugar free pellets/powder in a little warm water on top of the cake, by pricking the surface with a fork.
  • Turn cake upside down with pineapple rings on top. Prepare custard. Dissolve 10 sugar free pellets/powder in 4 tsp water and add to hot custard.
  • Mix well. Serve cake with hot custard.
