FLOATING ISLANDS

FLOATING  ISLANDS:
INGREDIENTS:                         (serves 4-6)

3  egg whites
600  ml  skimmed milk
1  tsp  custard powder
2  bananas or 200 gm assorted fruit
        mango,pineapple,etc)
12-14  Sugar Free Pellets or equivalent spoons
                                 Sugar Free Powder

METHOD:
  • Beat egg whites until stiff and fluffy. Boil 300 ml milk.  Add 1 tsp custard powder dissolved in little cold milk and boil for 1 minute on low heat.
  • Set aside. In a large pan, boil remaining 300 ml milk and add 1  tsp egg white to the boiling milk and cook for 1 minute till the egg white turns into a round ball (island).
  • Again add 1 tsp egg white and repeat the process till whole egg white is used up.( it will make approx. 8-10 balls).
  • Add the egg white & milk mixture to the custard and mix.  Add crushed sugar free pellets/powder, stir well and cool.
  • Add banana slices or any other seasonal fruit of your choice like mango, apple or pineapple. Serve chilled.
