APPLE CAKE


APPLE  CAKE:
INGREDIENTS:              (serves 4-5 )

100  gm melted butter
1  cup unsweetened apple puree (2 apples)
2  tsp baking powder
225  gm plain flour
2  eggs (optional)
50  ml milk
10  tsp honey
20  Sugar Free Pellets or equivalent spoons powder

METHOD:
  • Chop and stew the apples and make a puree with a hand blender.  Add 5 tsp of honey.Set aside.
  • Sieve the flour, baking powder. Add 5 tsp milk &5 tsp honey and beaten eggs to butter and mix until smooth.
  • Add more milk if required to get dropping consistency. Put the batter in a greased cake tin and bake at 190F for 40-50 minutes.
  • Test with a knife to see if done, then turn out on a wire rack to cool.
How to proceed:
  • Slit the cake horizontally into two layers. Make Sugar Free syrup of 20 crushed pellets/ Sugar Free Powder in 1/4 cup water and sprinkle on both cake pieces.
  • Sandwich the two with the stewed apple puree between yhe layers and decorate the top with small pieces of cooked apple and cherries. Serve with apple sauce or hot custard.
