INGREDIENTS: (serves 4-5 )
For cake:
2 eggs
50 gm maida (plain flour)
50 gm butter
3 tsp honey
1 tsp baking powder
10-12 Sugar Free Pellets or equivalent spoons
Sugar Free Powder
For strawberry jelly:
225 ml hot water
9 Sugar Free Pellets/powder
2 tsp gelatin
225 gm strawberry/pineapple pulp
For custard:
500 ml skimmed milk
4 tsp custard powder
8 Sugar Free Pellets/powder
Vanilla essence
METHOD:
For cake -
- Sieve plain flour and baking powder. Mix honey, eggs, melted butter in a mixer or with a hand blender.
- Mix the flour in, by stirring vigorously. Add 2-3 tbsp hot milk so that batter is of dropping consistency. Grease baking dish.
- Pour cake mix in it. Bake in pre-heated oven for 25-30 minutes at 350F. Make a syrup by stirring 10-12 crushed sugar free pellets/powder into 4 tsp of warm water.
- Remove cake from the oven, and pour syrup all over the cake after pricking the surface with a fork.
For jelly:
- Blend the strawberry/pineapple pulp with hot water. Add Sugar Free pellets ( crushed) and stir well.
- Add gelatin in 1 cup plain water in a small bowl and place the bowl in a large pan of boiling water and heat till gelatin dissolves.
- Add to mixture. mix well with a beater. Set in the refrigerator for 1-2 hrs.
For custard:
- Heat milk. Add custard powder dissolved in cold milk. Boil for 2-3 minutes. Remove from heat, add Sugar Free Pellets/powder, vanilla essence and stir well.
How to proceed:
- Take a big glass bowl. crumble the cake and pour custard over it.
- When cool, add whipped jelly on top. Arrange mixed fruits ( grapes/cherries) on top of the jelly. Serve chilled.
