PINEAPPLE / MANGO SOUFFLE



PINEAPPLE / MANGO  SOUFFLE:
INGREDIENTS:                 ( SERVES 3-4 )

300  gm  pineapple pieces or pulp of 2 mangoes.
2  cups milk
2  tsp  custard powder
Few pineapple slices or chopped mango
3  tsp gelatin dissolved in 1 cup water
9-10  Sugar Free Pellets or equivalent spoons
                                Sugar Free Powder

METHOD:
  • Boil milk.  Add custard powder mixed in cold milk. Stir well and boil for 2 minutes till it thickens.
  • Remove from heat. Cool it to room temperature. Steam pineapple in pressure cooker (1 whistle) and mix with a hand blender.
  • Add pineapple mixture to custard and crushed sugar free pellets / powder and mix well with a hand blender. ( for mango souffle and beaten mango pulp to custard ).
  • Add gelatin to 1 cup water in a small bowl and heat the bowl in a large pan of boiling water till gelatin dissolves.
  • Add to milk & pineapple / mango mixture. Set in a bowl. Decorate with pineapple / mango slices. Set in refrigerator for 2 hours and serve.
