SWEET COCONUT RICE


SWEET  COCONUT  RICE:
INGREDIENTS:              (serves 3-4 )

100  gm rice
20  gm  ghee
1/2  tsp  saffron strands
4  tbsp  hot milk
6  cardamoms
2" cinnamon stick
Extract of 50 gm grated fresh coconut
20  gm flaked and roasted almonds
30  gm cashewnuts
30  gm raisins
12  Sugar Free Pellets or equivalent spoons
                               Sugar Free Powder

METHOD:
  • Soak saffron strands in hot milk. Cook rice in boiling water and drain water.
  • Melt ghee in a saucepan. Saute rice , cardamom and cinnamon for 3 minutes.  Add coconut milk, and cook covered, over low heat, until the rice is fully cooked.
  • Add saffron and cook for 1 minute. Remove from heat, add sugar free pellets/powder and mix well.
  • Spoon into serving dish, decorate with cashewnuts, almonds, walnuts and raisins. Serve hot.
